Smørrebrød is our home, and at a wedding it truly comes into its own. Crisp toasted rye bread, vibrant toppings, and fresh herbs create structure, colour, and clean lines that not only taste exceptional but also look beautiful in photos. We blend the familiar with the playful, bringing guests together across generations and dietary preferences — from grandparents to foodie friends — in a style that perfectly reflects Copenhagen: relaxed, yet thoughtfully curated. At the same time, the format is flexible, allowing the menu to be tailored to your day — whether you’re dreaming of a bright lunch wedding, a standing reception, or a more laid-back evening with shared platters and options for everyone.

Rørt Bites – Small Mouthfuls for the Reception

For the hour after the ceremony, when the bubbles start flowing, Rørt Bites make a light and elegant choice. They’re miniature versions of our smørrebrød, served in homemade rugletters – small tartlets baked from the ends of our rye loaves. They taste warmly crisp and reduce food waste in the simplest way.

The format makes it easy to stay present with your guests – one hand for the glass, one for a bite. We can curate a mix of fresh, creamy and crisp flavours on each tray – for example shrimp salad with dill, crushed peas with chimichurri, and hot-smoked salmon with sesame.

As a rule of thumb:

  • 6–8 small bites per guest for a 1.5–2 hour standing reception
  • 2–3 full smørrebrød per guest for a lunch serving (3–4 for heartier appetites)

  • After the ceremony: Rørt Bites served on platters to keep the conversation flowing.
  • At the tables: a smørrebrød menu in 2–3 servings with freshly toasted rye, small herb salads and pickled vegetables on the side.
  • Later in the evening: a handful of plant-based bites or a creamy egg-and-truffle variation as gentle late-night comfort food.

Smørrebrød travels well, looks elegant and feels right for a wedding. The variety of textures – crisp, juicy, creamy – keeps every bite interesting.

We use organic ingredients where it makes the most sense and prioritise small, traceable producers. Our rye bread is our own – sourdough-based, toasted before serving for that deep aroma and signature crust. Fish and shellfish come from certified coastal fisheries, and we work with species in season. Vegetables are local and organic whenever possible – herbs, summer cabbage, peas.

The rugletters for our Rørt Bites are baked from the ends of our rye loaves – a small step that both tastes and makes sense.

Here’s a sample menu that works beautifully for summer weddings – not a fixed setup, but a place to start:

  • Welcome: Rørt Bites – shrimp salad with dill, peas with chimichurri, hot-smoked salmon with sesame.
  • At the table: start gently with egg and truffle; follow with chicken salad and roasted mushrooms; end with new potatoes on chive mayo and crispy onions.
  • Late night: a few plant-based bites and pickled vegetables for a refreshing finish.
